Pasta in a creamy pea sauce

 

Ingredients (for 2 servings):

- 250 g of wholemeal pasta
- 1 tablespoon of olive oil
- 3 young onions
- 2 cloves of garlic
- 400 g of peas (fresh or frozen)
- 400 ml of water
- 50 g of tahini
- juice of half a lemon
- parsley leaf, salt and pepper as desired


Preparation:

1. Cook the pasta according to the instructions on the package.

2. In the meantime, clean and chop the scallions and garlic.

3. Heat the oil in a small pan, on a medium high temperature, and add spring onions, garlic and peas. Sauté the vegetables stirring constantly and pour water little by little.

4. When the peas are soft, after about 6 minutes, mix in the tahini, lemon juice and parsley. The vegetables should not be dry, but if they seem to be, add a couple of tablespoons of water.

5. Using a stick mixer or a blender, mix the vegetable mixture into a creamy sauce. If desired, leave some pieces of peas for texture.

6. Season as desired with salt, pepper and additional lemon juice or parsley.

7. Mix the pasta so that it is all covered with the sauce and serve warm or cool and store in a closed container in the refrigerator for up to two days

 

Tahini

Tahini is a spread, originally from Arab countries, made from ground sesame seeds. It can be used in the preparation of many dishes, and also as an independent food.


Tahini is rich in essential amino and fatty acids, vitamins and minerals. It is useful to remember that it is an excellent source of calcium.


In cooking, tahini is an indispensable ingredient of hummus, and you can also use it as a base for:
- salad dressing,
- sauce for raw or roasted vegetables,
- pasta sauce,
- spread on pastries,
- for thickening broths and
- enrichment of cream soup.
